Mixed Vegetable Curry
1 large onion, finely cut
1 garlic clove, finely cut
1 tomato, finely cubed
3 green, hot chilies, finely cut
3 medium-sized potatoes, cut into bite-size pieces
1 small eggplant (aubergine), cut into bite-size pieces
1 handful of fresh baby spinach
1 smallish tin of tomato sauce
1/2 small tin of tomato paste
To taste:
salt
cumin
turmeric
cayenne pepper
coriander
lemon peel or orange peel or pomegranate seeds
cilantro
Heat some butter and olive oil and fry onion over medium heat. When slightly brown, add chilies, tomato and garlic and fry another 4-5 minutes over medium heat. Add tomato paste and stir well. As soon as it starts to darken, add tomato sauce and spices to taste. Let gently boil for a few minutes, then add 1-2 cups of water and potatoes and aubergine. Cook for 25 minutes (or until potatoes/eggplants are soft), then add spinach and cook for another five minutes.
Sprinkle with cilantro. Serve over rice or eat with pita bread.
