*grins* I'd forgotten how fun it is to make mozzarella!

The quark is really dead-easy to make. My only gripe was that it wasn't dry enough, so I'll try heating it a little bit more than room temperature (probably dump the pot in the oven and heat to about 90F so the whey separates more easily). But still, the cheesecake was fine. :P
