Mixed Vegetable Curry

1 large onion, finely cut
1 garlic clove, finely cut
1 tomato, finely cubed
3 green, hot chilies, finely cut
3 medium-sized potatoes, cut into bite-size pieces
1 small eggplant (aubergine), cut into bite-size pieces
1 handful of fresh baby spinach
1 smallish tin of tomato sauce
1/2 small tin of tomato paste
To taste:
salt
cumin
turmeric
cayenne pepper
coriander
lemon peel or orange peel or pomegranate seeds
cilantro

Heat some butter and olive oil and fry onion over medium heat. When slightly brown, add chilies, tomato and garlic and fry another 4-5 minutes over medium heat. Add tomato paste and stir well. As soon as it starts to darken, add tomato sauce and spices to taste. Let gently boil for a few minutes, then add 1-2 cups of water and potatoes and aubergine. Cook for 25 minutes (or until potatoes/eggplants are soft), then add spinach and cook for another five minutes.

Sprinkle with cilantro. Serve over rice or eat with pita bread.

See, I didn't know that! I adore the food I get at Indian restaurants, but don't have a clue how to go about duplicating it. This recipe looks like the real deal. Thank you!

Come on over for a cooking session! :-) If I had any idea how to search for tags in my LJ, I'd give you the links to other Indian recipes. I've posted a few over time.

The most important thing with Indian cooking is once you add the spices (which you almost always do before you add the actual ingredients) you let them cook thoroughly; if in doubt, rather too long than not long enough.

If you want a basic and thoroughly awesome introduction to cooking Indian food that is easy to follow, I'd recommend any of Madhur Jaffrey's cookbooks, which I'm sure you can locate on half.com or amazon. I learned to cook Indian food at the feet of a woman from India, but Madhur Jaffrey is indispensable to me too.

And now I'm going to have to try this curry, because it sounds delish.

Thank you for the rec! I am going to look for this. I have had the devil of a time finding the proper ingredients in Texas, but I've recently heard there's a special shop not far from my house and I'll check to check it out.

On an unrelated note, I have been hearing wonderful things about your stories - eventually I'll get my disorganised self over to check them out. I look forward to it!

Thanks for that tip! I love cookery books, but haven't found any decent Indian ones so far. Must look out for the Madhur Jaffrey ones.
