Aug. 28th, 2007 01:15 pmHere you go,
livingdeadgal, the recipe for those things with sweetcorn I made some years back on Little Man's b-day.
Hush Puppies
250 g cornmeal (maize flour)
100 g tinned sweetcorn
250 ml buttermilk
75 g flour (I use spelt)
1 large egg
1 tsp baking powder
1/2 tsp paprika
1 tsp salt
1 very finely chopped small onion
Oil
Mix cornmeal, buttermilk, flour, egg, baking powder and spices very well, add sweetcorn. Heat oil in pan, about 2" deep, when hot, add teaspoonfuls of mixture and fry until golden.
